Rainbow Parfait
Ingredients
- Raspberry Puree 5 oz
- Chopped almonds 2 tablespoons
- Milk 15 fl oz
- Coffee Liqueur 1 tablespoon
- Chopped almonds 2 tablespoons
- Coffee Liqueur 1 teaspoon
- Candied fruits 0 oz
- 10% cream 0 qt
- Pistachios 1 tablespoon
- Whole egg 6 pieces
- Vanilla salt 1 teaspoon
- Sugar 1 cup
Step-by-Step Guide
Step 1
Whip the cream until fluffy and divide into 4 parts.
Step 2
Prepare 4 types of cream. For the first, mix the pureed fresh raspberries with the chopped candied fruits.
Step 3
For the second, mash the nuts (hazelnuts, almonds).
Step 4
For the third, add finely chopped pistachios to the pistachio paste.
Step 5
For the fourth, combine the coffee extract (cocoa, melted chocolate) with the liqueur.
Step 6
Mix the parts of cream with the different creams.
Step 7
Take a round mold with dividers, fill each section with cream. Let it cool slightly.
Step 8
Remove the dividers. Place in the freezer (0... –3˚C).
Step 9
To prepare the English sauce, add vanilla and the yolks mixed with sugar to the boiling milk.
Step 10
Stir until homogeneous. Cool and divide into 4 parts.
Step 11
Combine each part with different fillings.
