Ingredients
- Water 30 fl oz
- Quinoa 15 oz
- Raisins 0 oz
- Salt 0 oz
- Olive Oil 0 fl oz
- Courgette 2 pieces
- Carrot 2 pieces
- Paprika 0 oz
- Ground Cinnamon 0 oz
- Cilantro 5 fl oz
Step-by-Step Guide
Step 1
In a pot, add quinoa and pour in water, raisins, and salt. Bring to a boil, reduce heat, cover, and cook for 20 minutes until the quinoa is tender and all the liquid has evaporated.
Step 2
Meanwhile, heat olive oil in a large skillet over medium heat. Add diced carrots and sauté for 5 minutes until soft, then add diced zucchini and cook for another 3 minutes until tender. Sprinkle with paprika and cinnamon.
Step 3
Add quinoa to the skillet and mix well. Season with salt and pepper to taste and sprinkle with cilantro.
