Quince Shortcrust Pie with Caramel
Ingredients
- Sugar 1¾ cups
- Lemon 2 pieces
- Quince 5 lbs
- Salt a pinch
- Butter 2 tablespoons
- Wheat Flour to taste
- Shortcrust Cake Mix 20 oz
Step-by-Step Guide
Step 1
In a pot, combine 10 cups of water and 1 cup of sugar. Use a knife to peel the zest from 0.5 lemon and add it to the pot. Cut the lemons in half and squeeze the juice from 1.5 lemons into the pot.
Step 2
Peel the quinces, cut them in half, and remove the cores. Transfer them to the pot. Bring to a boil, cover, reduce heat, and simmer for 8–10 minutes until soft. Drain.
Step 3
Preheat the oven to 375°F.
Step 4
In a round baking dish (or skillet), combine the remaining sugar and a large pinch of salt. Place over medium heat and cook until it reaches a light brown caramel state. Remove from heat and stir in the butter.
Step 5
Arrange the quinces cut side up in the caramel and drizzle with lemon juice from the remaining half lemon.
Step 6
On a floured surface, roll out the pastry and place it over the fruit. Press down.
Step 7
Bake for about 45 minutes until golden brown.
Step 8
Cool for 10 minutes and carefully invert onto a plate. Serve warm.
