Quick Vegetable Soup
Ingredients
- Potatoes 2 pieces
- Green Peas 5 oz
- Cabbage 5 oz
- Carrot 1 piece
- Onion 1 piece
- Bell pepper 1 piece
- Bay leaf 4 pieces
- Celery root 5 oz
- Garlic 1 clove
Step-by-Step Guide
Step 1
Peel the potatoes and cut them into small cubes. Pour in 2 liters of water. Add the peas (I use frozen in winter), peeled celery root, bay leaves, and allspice. Cook until the potatoes are tender.
Step 2
Finely chop the onion, pepper, and garlic, and grate the carrot. Sauté everything in butter. Add to the soup.
Step 3
Finely chop the cabbage and add it to the soup. Cook for 10 minutes.
Step 4
At the end, remove the bay leaves and celery root.
Step 5
Serve with sour cream and fresh herbs.
