Quick Turkey Soup with Brown Rice
Ingredients
- Onion 10 oz
- Chicken Broth 6½ cups
- Garlic 1 clove
- Carrot 10 oz
- Turkey Escalopes 2 pieces
- Spiced Tomato Juice 15 oz
- Basmati rice 1½ cups
- Chopped Sage Leaves 3 tablespoons
Step-by-Step Guide
Step 1
Cook the rice in boiling water until done. Drain.
Step 2
In a large pot, heat 0.25 cups of broth over medium heat. Add finely chopped onion and carrot and cook for about 5 minutes until the carrot is tender.
Step 3
Add minced garlic and cook for another minute.
Step 4
Add the remaining broth, chopped tomatoes, diced turkey, and rice. Cook for 20 minutes, sprinkle with parsley, and serve.
