Ingredients
- Onion 1 head
- Garlic 1 clove
- Carrot 1 piece
- Olive Oil 1 tablespoon
- Canned Tomatoes (Pelati) 20 oz
- Cream (40%) 2 tablespoons
- Chicken Broth 5 fl oz
- Fresh basil leaves to taste
- Celery stalk 1 piece
Step-by-Step Guide
Step 1
In a pot, heat the olive oil and sauté the finely chopped onion, grated carrot, finely chopped celery, and minced garlic until soft.
Step 2
Add the tomatoes and broth and cook for 15 minutes until the vegetables are tender. Season with salt and pepper.
Step 3
Pour the soup into a blender and puree until smooth. Stir in the cream and a handful of finely chopped basil.
