Quick Pickled Tomato Soup

Ingredients

  • Onion 2 pieces
  • Carrot 1 piece
  • Green pickled tomatoes 5 pieces
  • Potato 5 pieces
  • Butter 1 tablespoon
  • Water 25 fl oz
  • Dill to taste
  • Parsley to taste

Step-by-Step Guide

Step 1

Sauté the onion and grated carrot (which will give the soup a golden color) in butter.

Step 2

Place a pot of water on the stove. Bring the water to a boil and add the sautéed mixture.

Step 3

Let it boil for 2 minutes and add the chopped potato.

Step 4

Chop the pickled tomatoes and add them to the soup 5 minutes before turning off the heat (you can add the brine as well, 5 tablespoons).

Step 5

Chop the dill and parsley and add them to the soup after turning off the heat.
