
Quick Lemon Pie with Pistachios

Description
Green pistachios can be quite hard to find. I bring them from Germany, where they are sold in every grocery store. However, they can easily be replaced with any other nuts: walnuts, pecans, almonds, or hazelnuts, depending on what you have on hand.
Ingredients
- Butter 5 oz
- Brown Sugar 5 oz
- Wheat Flour 5 oz
- Baking Powder 1 tablespoon
- Lime 1 piece
- Lemon 1 piece
- Pistachios 5 oz
- Farm fresh eggs 3 pieces
Step-by-Step Guide
Step 1
Preheat the oven to 320°F. Grease and flour a pie dish.
Step 2
Finely grate the zest of 1 lemon and 1 lime, and squeeze the juice from half of the lemon.
Step 3
Chop the pistachios in a food processor or mortar into coarse crumbs.
Step 4
Beat the softened butter with 150 grams of sugar using a mixer until creamy. Gradually add the eggs one at a time, beating well.
Step 5
Add the flour, baking powder, ground pistachios, lemon juice, and zest, and mix well.
Step 6
Transfer the batter to the dish and sprinkle with 10 grams of sugar on top.
Step 7
Bake for 30–35 minutes until done. Baking time depends on the shape of the dish used. The thinner the layer of batter, the shorter the baking time.
Step 8
Cool in the dish for 15 minutes and then transfer to a serving plate.
