Quick Lemon-Cottage Cheese Cake
Baking and Desserts • European
Description
This cake can be made with any flavor and any additions. It all depends on the flavor of the jelly and what you want to put inside: berries, nuts, fruits. Since cream and eggs are not used, the dessert becomes more diet-friendly. Delicious! Enjoy!
Ingredients
- Fruit Jelly 2 pieces
- Cottage cheese 10 oz
- Oreo Cookies 5 oz
- Liquid dark chocolate ½ piece
- Grated Lemon Zest 2 tablespoons
- Butter 0 oz
Step-by-Step Guide
Step 1
Crush the cookies into crumbs and mix with melted butter and chocolate, knead well, and press into the bottom of a baking pan (with removable sides) in an even layer. Refrigerate for 1 hour.
Step 2
Mix the cottage cheese mixture (if it has raisins, even better) with the lemon jelly dissolved in hot water, add the zest. Mix thoroughly with a mixer. Pour into the pan with the set crust and refrigerate until ready (see the instructions on the jelly package).
Step 3
You can save some jelly and pour it on top later when the cottage cheese-jelly mixture has set. It's better to dissolve the jelly with slightly less water than indicated in the package instructions.
Step 4
Decorate to your liking. A regular knife or briefly heating the sides of the pan will help detach the cake from the walls.
