
Quick Kefir Pancakes with Wheat Flour

Description
This recipe makes about 18–20 pancakes. You can add vanilla to the batter and brush the pancakes with butter. Serve with anything you like: sour cream, caviar, honey, jam.
Ingredients
- Egg white 2 pieces
- Kefir 15 fl oz
- Sugar 2 tablespoons
- Salt ½ teaspoon
- Wheat Flour 12 tablespoons
- Vegetable Oil 2 tablespoons
- Activated Baking Soda 1 teaspoon
- Boiling water 5 fl oz
Step-by-Step Guide
Step 1
Whisk the eggs, salt, and sugar until frothy. Boil water (you need 150 ml).
Step 2
Pour the mixture into the kefir and heat it (do not boil!), stirring until it reaches a temperature that is 'tolerable to the finger.'
Step 3
Carefully fold in the flour.
Step 4
Dissolve the baking soda in the already cooled boiling water and add it to the batter; it will start to bubble.
Step 5
Add the oil and mix the batter (do not whisk!).
Step 6
Now you can cook the pancakes (flip them when the surface becomes matte).
