Quick Italian Lemon Bread with Berries
Ingredients
- Wheat Flour 2½ cups
- Baking Powder 1½ teaspoons
- Salt ½ teaspoon
- Sugar 1.60 cups
- Butter 5 oz
- Farm fresh eggs 3 pieces
- Dessert Yogurt 5 oz
- Vanilla extract ½ teaspoon
- Citrus Zest Mix 1 teaspoon
- Lemon-Pepper Mix ½ teaspoon
- Yellow Sugar to taste
- Lemon 2 pieces
- Powdered Sugar ½ cup
- Meyer Lemon Juice 1 teaspoon
- Fresh Berries 10 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a bowl, beat the softened butter and 1.5 cups of sugar until fluffy. Add the eggs, juice of 1 lemon, yogurt, lemon zest, vanilla and lemon extracts, and a few drops of yellow food coloring.
Step 3
In another bowl, mix the sifted flour, salt, and baking powder. Gradually add to the butter mixture, mixing with a fork.
Step 4
Grease a loaf pan with butter and transfer the batter into it. Bake for about 1 hour until done. Let cool.
Step 5
Meanwhile, in a bowl, mix the powdered sugar and the juice of the second lemon. Mix well and spread over the lemon bread.
Step 6
In a bowl, combine the berries, 1 teaspoon of lemon juice, and 2 tablespoons of sugar. Gently mix and let sit for 30 minutes.
Step 7
Slice the bread and serve, garnished with the berries on top.
