Ingredients
- Chickpea 15 oz
- Tahini 2 tablespoons
- Black Cumin (Cumin) 2 tablespoons
- Garlic 1 clove
- Olive Oil 0 fl oz
- Lemon ½ piece
- Paprika to taste
- Salt to taste
Step-by-Step Guide
Step 1
If you are using dry chickpeas: soak 1 cup of dry chickpeas overnight in a pot of water. In the morning, drain the water and cook for about 40 minutes until tender. Cool.
Step 2
Toast the cumin in a hot dry skillet and grind it in a mortar with a pinch of coarse salt.
Step 3
Crush the garlic with the side of a knife.
Step 4
If you are using canned chickpeas, drain the liquid from the can.
Step 5
In a food processor, combine the chickpeas, tahini, cumin, juice of half a lemon, and garlic, and blend at maximum speed.
Step 6
Slowly add the oil, trying to achieve the desired consistency. From experience, the perfect consistency of hummus is quite individual. It should not resemble soup but be easy to spread on bread.
Step 7
When serving, drizzle with olive oil and lemon juice on top. You can also garnish with a sprinkle of dry paprika.
