Mega delicious, quick, diet-friendly muffins. You can inject jam or jelly inside with a syringe. You can spread honey on top and sprinkle with powdered sugar.
Ingredients
- Sugar 3 tablespoons
- Egg white 3 pieces
- Egg white 3 pieces
- Activated Baking Soda ¼ teaspoon
- Raisins 0 oz
- Nuts 0 oz
- Coarse Cornmeal 6 tablespoons
Step-by-Step Guide
Step 1
Beat the egg whites until a good foam forms, slowly adding the sugar.
Step 2
Add the egg yolks, baking soda, raisins, and crushed nuts. Whip together.
Step 3
Add the cornmeal.
Step 4
Spoon into greased muffin tins.
Step 5
Bake at 170–355°F for about half an hour (check for doneness with a toothpick).
