Quick cream soup of broccoli and Stilton cheese with cheese croutons
Ingredients
- Broccoli 10 oz
- Butter 0 oz
- Chicken Broth 15 fl oz
- Scallions 4 stalks
- Stilton Cheese 5 oz
- Cream (40%) 5 fl oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Ground Nutmeg a pinch
- French Baguette 4 pieces
Step-by-Step Guide
Step 1
Place the chopped broccoli in a bowl, pour in the broth, cover with plastic wrap, and microwave for about 4 minutes on high until soft.
Step 2
Meanwhile, heat a skillet with the butter. Add the finely chopped green onions and sauté for a minute.
Step 3
Transfer the broccoli with the broth to a food processor or blender. Add the green onions, 50 grams of crumbled cheese, and cream. Blend until smooth.
Step 4
Pour the soup into a pot and bring to a boil.
Step 5
Meanwhile, toast the slices of bread in a toaster or on a grill until golden. Place a piece of cheese on each slice and return to the grill for a while.
Step 6
Season the soup with salt and pepper. Sprinkle with nutmeg.
Step 7
Ladle the soup into bowls, placing a crouton on top of each.
