Ingredients
- Cream (40%) 10 fl oz
- Liquid dark chocolate 10 oz
- Butter 0 oz
- Cocoa Powder to taste
Step-by-Step Guide
Step 1
Chop the chocolate finely, place it in a blender, and grind it to a crumbly texture.
Step 2
Heat the cream in a saucepan and immediately pour it over the chocolate. Whip until the mixture has a consistency similar to thick mayonnaise.
Step 3
Add the softened butter and whip again.
Step 4
Transfer the mixture to a bowl and refrigerate for 15 minutes, until it reaches a consistency similar to butter and can be shaped into truffles — do not freeze it too much.
Step 5
Transfer the mixture to a piping bag and pipe small mounds onto parchment paper or plastic wrap.
Step 6
Chill for 2 hours in the refrigerator, then roll in cocoa powder, shredded coconut, or crushed nuts.
