Description
Blueberries require careful handling — they need to be gently mashed without straying from the recipe. The jam will turn out sweet, making it perfect to serve with buttery croissants and plain cheese pancakes.

- Fresh Berries 4 cups
- Sugar 3½ cups
Step-by-Step Guide
Step 1
Preheat the oven to 250°F (120°C). Place an empty plate in the freezer.
Step 2
In a saucepan, mash 1 cup of blueberries, add the remaining berries and 120 ml (½ cup) of water. Bring to a boil over medium heat. Cook, stirring with a wooden spoon, until the berries are soft, about 6 minutes.
Step 3
Meanwhile, spread the sugar on a baking sheet and place it in the oven to warm for 5 minutes.
Step 4
Slowly add the sugar to the blueberries and bring to a boil again. Reduce the heat and cook, stirring, until thickened, about 45 minutes to 1 hour. To check the readiness of the jam, drop a little onto the plate from the freezer — the drop should not run and should remain firm.
