Quiche with Ricotta and Cherry Tomatoes
Ingredients
- All-purpose flour 10 oz
- Butter 5 oz
- Egg Yolk 1 piece
- Salt a pinch
- Ricotta cheese 10 oz
- Chicken Eggs 3 pieces
- Water 2 tablespoons
- Cherry Tomatoes 10 oz
- Sour Cream 5 oz
- Garlic 2 cloves
- Basil to taste
- Ground Black Pepper to taste
- Hard Cheese 0 oz
Step-by-Step Guide
Step 1
Crush the flour with the butter until crumbly, add the yolk, salt, water, and knead into a smooth dough. Place the dough in a mold with a diameter of about 20 cm, forming the edges.
Step 2
Prick the dough with a fork and refrigerate for 20-30 minutes.
Step 3
Preheat the oven to 180°C.
Step 4
Grate the cheese. Mix the ricotta, grated cheese, and sour cream until smooth. Add pepper, salt, and minced garlic. Add dried basil or chopped fresh leaves.
Step 5
Add the eggs and mix well.
Step 6
Cut the cherry tomatoes (it’s better to use a mix of colors for a nicer appearance) in half.
Step 7
Pour the filling into the mold. Arrange the halved cherry tomatoes on top in a spiral or in rows, slightly pressing them in.
Step 8
Bake for 35-40 minutes.
