Quiche with Chicken and Munster Cheese
Ingredients
- Wheat Flour 5 oz
- Butter 5 oz
- Farm fresh eggs 4 pieces
- Skin-On Chicken Breasts 1 piece
- Munster cheese 5 oz
- Onion 1 head
- Sour Cream 10 oz
- Dry White Wine 5 fl oz
- Olive Oil 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Dried Barberry a pinch
Step-by-Step Guide
Step 1
Combine the flour and salt, add one egg, then add the cold butter, previously cut into cubes. Knead until a smooth dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
Step 2
Roll out the dough on a floured surface into a thin layer.
Step 3
Preheat the oven to 355°F (350 degrees Fahrenheit). Grease the baking dish with oil, line the bottom with parchment paper. Carefully line the bottom and sides of the dish with the dough, making frequent pricks with a fork. Place a circle of parchment paper on top and fill with dry beans. Bake for 10 minutes. Remove the beans and paper and bake for another 10 minutes until golden.
Step 4
For the filling, sauté the onion in olive oil, add the diced chicken breast. Cook, stirring, for 5–7 minutes, then remove from heat. Cut the cheese into small pieces.
Step 5
For the custard, beat three eggs, sour cream, and white wine, season with salt and pepper to taste.
Step 6
Spread the chicken and cheese over the dough and pour the liquid mixture on top, sprinkling with dried tarragon.
Step 7
Bake for about 40 minutes until golden brown.
