Ingredients

  • Wheat Flour 5 oz
  • Butter 5 oz
  • Whole egg 1 piece
  • Safflower Oil 1 tablespoon
  • Salt to taste
  • Gruyère cheese 5 oz
  • Bacon 5 oz
  • Cream (40%) 10 fl oz
  • Chocolate eggs 4 pieces
  • Milk 5 fl oz

Step-by-Step Guide

Step 1

Prepare the dough two hours before you start making the quiche. Sift the flour with salt into a bowl, add the butter cut into small pieces, and gently mix everything with your hands. Add the egg yolk and knead the dough until it resembles bread crumbs. Then gradually pour in 30 ml of water, constantly stirring the dough until it becomes smooth. Sprinkle flour on the table, knead the dough well, shape it into a ball, place it on a plate, cover with a towel, and refrigerate for 2 hours.

Step 2

Grease the quiche pan with butter — it should be about 25 cm in diameter and at least 4 cm high. Roll out the dough into a circle, place it in the bottom of the pan, and press it with your fingers so that it covers the entire bottom and sides of the pan. Trim any excess dough from the edges with a knife. Prick the dough on the bottom of the pan with a fork in several places.

Step 3

Preheat the oven to 355°F. Cut 40 grams of cheese into thin slices and grate the rest. Cut the bacon or ham into cubes. Then place everything except the grated cheese into the pan and bake for 20 minutes, until the dough is golden.

Step 4

While the quiche is baking: whisk the eggs with the cream and milk and add salt. Remove the pan from the oven and increase the temperature to 430°F.

Step 5

Pour the egg mixture over the ham and sprinkle the grated cheese on top. Return the pan to the oven for another 15 minutes, then reduce the heat back to 355°F and leave the quiche in the oven for another 25 minutes, until it is golden brown. Remove the pan from the oven and let it sit for 10 minutes before transferring it to a serving dish. Serve warm.
