Ingredients

  • Red Cabbage 25 oz
  • Cauliflower 10 oz
  • Onion 1 piece
  • Garlic 2 cloves
  • Clarified Butter 1 tablespoon
  • Salt to taste
  • Spices to taste
  • Herbs to taste

Step-by-Step Guide

Step 1

Wash the cauliflower and divide it into florets, chop the red cabbage into small pieces.

Step 2

Place all the cabbage in a pot, cover with water or broth so that it is submerged. Cook for 10–15 minutes.

Step 3

Finely chop the onion and garlic, sauté in butter until golden brown.

Step 4

Add the sautéed mixture to the cabbage, season with salt, add dried herbs and spices, and cook for another 5 minutes.

Step 5

Blend into a puree with an immersion blender. Drizzle with truffle or garlic oil, and garnish with herbs.
