Ingredients
- Butter 0 oz
- Onion 3 heads
- Garlic 3 cloves
- Pears 2 pieces
- Chicken Broth 0 qt
- Pumpkin 15 oz
- Cinnamon 1 teaspoon
- Salt to taste
- White Pepper (whole) to taste
- Shelled pumpkin seeds 2 tablespoons
- White bread 5 oz
Step-by-Step Guide
Step 1
Peel the pumpkin, remove the seeds, and cut it into large pieces.
Step 2
Peel the pear and cut it into quarters.
Step 3
Roast the flesh of the pumpkin and pear in the oven at 390°F for about half an hour. Then blend the pumpkin and pear in a blender.
Step 4
Toast the shelled pumpkin seeds in a dry skillet.
Step 5
Heat the butter in a pot and sauté the chopped onion and garlic. Then pour in the vegetable broth. Add cinnamon, salt, and pepper.
Step 6
Combine the broth and pumpkin-pear puree. Sprinkle with pumpkin seeds.
Step 7
Serve with croutons. For this, cut the white bread into cubes and fry in butter.
