Ingredients
- Pumpkin 0 lbs
- Butter 0 oz
- Onion 1 piece
- Chili Pepper 1 piece
- Fresh Ginger 0 oz
- Garlic 1 clove
- Vegetable Broth 0 qt
- Lime 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Cilantro to taste
- Natural Yogurt to taste
- Pumpkin Seeds to taste
- Nut Paste 0 oz
Step-by-Step Guide
Step 1
Peel the pumpkin and cut it into small cubes.
Step 2
In a pot, melt the butter and add the chopped onion, sauté until soft.
Step 3
Add the chili (1 fresh or a pinch of dried), 3 cm of fresh ginger, and the clove of garlic.
Step 4
After a couple of minutes, add the pumpkin, season with salt and pepper.
Step 5
Cook for another 5 minutes.
Step 6
Pour in the broth and simmer for 15–20 minutes until the pumpkin is soft.
Step 7
Transfer the finished soup to a blender, add the nut paste, and blend until smooth.
Step 8
Pour in the lime juice and add finely chopped cilantro.
Step 9
Serve with natural yogurt and pumpkin seeds.
