Ingredients
- Pumpkin 10 oz
- Turnips 2 pieces
- Ginger 0 oz
- Garlic 2 cloves
- Onion 1 piece
- Parsley to taste
- Olive Oil to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the pumpkin from the skin and seeds, and cut it into large pieces. Slice the onion, carrots, and ginger into rings, and halve the garlic. Place everything on a baking sheet, lightly salt, pepper, and send it to the oven for 20 minutes at 355°F. Stir the vegetables occasionally to prevent burning.
Step 2
After removing from the oven, transfer the vegetables to a pot, cover with water, bring to a boil, and cook for a couple more minutes until the vegetables are completely soft.
Step 3
Then blend everything in a blender, add a bit of olive oil, adjust for salt and pepper, sprinkle with chopped parsley, and serve.
