Pumpkin Soup with Curry and Croutons
Ingredients
- Pumpkin 25 oz
- Onion 1 head
- Garlic 1 clove
- Curry 2 teaspoons
- Olive Oil 3 tablespoons
- Milk 5 fl oz
- Salad Potatoes 3 pieces
- White bread 5 oz
- Black sesame seeds to taste
Step-by-Step Guide
Step 1
Sauté finely chopped onion and garlic in olive oil.
Step 2
Add curry and cook for about a minute until the spices become fragrant.
Step 3
Add diced pumpkin and potatoes.
Step 4
Simmer until the vegetables are soft, about 15 minutes (you may need to add water at this stage to ensure the vegetables stew rather than fry).
Step 5
Using an immersion blender, puree the vegetables until smooth. If it becomes too thick, dilute with milk/cream or just boiling water.
Step 6
When serving, add croutons (bread + olive oil + garlic + salt + oven for 5–7 minutes) and sprinkle with black sesame seeds.
