Ingredients

  • Pumpkin 20 oz
  • Potato 3 pieces
  • Onion 1 piece
  • Garlic 3 cloves
  • Butter 0 oz
  • Olive Oil 2 spoons
  • Cream 22% 5 fl oz
  • Water 1½ l
  • Sugar ½ spoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Croutons to taste

Step-by-Step Guide

Step 1

Thoroughly wash the pumpkin, cut it in half, and dice the flesh into small cubes. Wash the potatoes, peel them, and cut them into cubes. Peel the onion and chop it finely. Peel the garlic cloves and crush them using a garlic press.

Step 2

In a deep pot, heat olive oil and sauté the chopped onion. Add butter and garlic, and cook for 2 minutes, stirring occasionally.

Step 3

Add the pumpkin and potatoes to the same pot, sprinkle with sugar, mix all the ingredients thoroughly, and sauté for 5-7 minutes.

Step 4

Pour 1.5 liters of water into a pot, bring it to a boil, and cook the vegetables for 20-25 minutes, until the potatoes and pumpkin are tender.

Step 5

Pour the cooked pumpkin soup into a blender and blend all the ingredients until smooth. Then add the cream, season with salt and pepper to taste, and blend everything again.

Step 6

Rye croutons are the perfect complement to pumpkin soup.
