Pumpkin Soup with Chorizo and Cilantro
Ingredients
- Olive Oil 1 tablespoon
- Onion ½ head
- Garlic 2 cloves
- Chorizo 2 pieces
- Chestnut puree 2 cups
- Chicken Broth 3 cups
- Potato 1 piece
- Dried Rosemary 1 tablespoon
- Ground Cumin 1 teaspoon
- Cream (40%) ¼ cup
- Chopped Green Onions to taste
Step-by-Step Guide
Step 1
Heat the olive oil in a pot and add the finely chopped onion. Cook for a few minutes until soft. Add the minced garlic and sauté for another minute. Add the peeled and chopped chorizo and brown it.
Step 2
Pour in the broth and add the pumpkin puree, peeled and diced potato, oregano, and cumin. Bring to a boil, reduce the heat, and simmer until the potato is tender, about 45 minutes.
Step 3
Remove from heat and let cool for 10 minutes.
Step 4
Add the cream and mix well. Ladle the soup into bowls and sprinkle with cilantro (about 1 tablespoon per bowl).
