Pumpkin Soup with Beans and Cilantro
Ingredients
- Pumpkin 20 oz
- Olive Oil 1 tablespoon
- Onion 1 head
- Mild Chili Spice 1 piece
- Chicken Broth 30 fl oz
- Cilantro ½ bunch
- White Beans 15 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the pumpkin and cut it into small pieces.
Step 2
Heat the olive oil in a pot, add the finely chopped onion, and sauté over low heat for 5-6 minutes until soft. Then add the deseeded and finely chopped chili and pumpkin, and sauté for another 2-3 minutes.
Step 3
Add the broth, bring to a boil, reduce the heat, and cook for 10-15 minutes until the pumpkin is soft. Blend the soup until smooth.
Step 4
Add the beans and cilantro leaves to the soup. Bring to a boil and cook for another 2-3 minutes. Season with salt and pepper and serve.
