Pumpkin Soup with Beans and Chili
Ingredients
- Pumpkin 20 oz
- Olive Oil 1 tablespoon
- Onion 1 head
- Mild Chili Spice 1 piece
- Chicken Broth 0 qt
- Cilantro to taste
- Salt to taste
- Canned Baby Beets 15 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the pumpkin in half, remove the seeds and skin, and chop into small pieces.
Step 2
Heat the olive oil in a pot and sauté the finely chopped onion for 5-6 minutes over low heat until soft. Then add the seeded and finely chopped chili and pumpkin. Sauté for another 2-3 minutes.
Step 3
Pour in the broth, bring to a boil, reduce the heat, and cook for 10-12 minutes until the pumpkin is soft.
Step 4
Transfer the soup to a blender and puree until smooth.
Step 5
Pour the soup back into the pot, add the beans and a handful of chopped cilantro. Cook for another 2-3 minutes. Season with salt and pepper and serve.
