Ingredients

  • Olive Oil 3 spoons
  • Leek 2 pieces
  • Potato 10 oz
  • Pumpkin 25 oz
  • Milk 15 fl oz
  • Bouillon cube 1 piece
  • Salt to taste

Step-by-Step Guide

Step 1

All the vegetables need to be peeled, the seeds removed from the pumpkin, and both the pumpkin and potatoes cut into cubes, while the leeks should be chopped.

Step 2

Heat the oil in a large skillet, add the leeks, and sauté over low heat, stirring, for 5 minutes, until the onions are soft.

Step 3

Add the potatoes and pumpkin, pour in 1.5 liters of water, and season with salt (remember that the broth cube is also salty). Bring to a boil, reduce the heat, and simmer for 45 minutes. Remove the pot from the heat and let it cool slightly. Then blend everything in batches, transferring to a clean pot. Add the milk and mix well.

Step 4

Heat again over low heat and crumble a bouillon cube into the pot. Stir well. Serve hot.
