Pumpkin Seed Candies
Ingredients
- Shelled pumpkin seeds 5 oz
- Sugar ¼ cup
- Honey 6 tablespoons
- Butter 5 tablespoons
Step-by-Step Guide
Step 1
In a well-heated skillet, toast the seeds until golden, about 3 minutes. Transfer to a bowl and let cool.
Step 2
In a saucepan, combine sugar and honey. Bring to a boil and cook for 3 minutes, stirring until the sugar dissolves. Add the seeds and cook for another 3–4 minutes, until the caramel reaches about 285°F. Remove from heat and add 3 tablespoons of cooled butter. Mix well.
Step 3
Cool the mixture to 240°F, about 4 minutes.
Step 4
Meanwhile, use the remaining softened butter to grease 15 paper candy molds, approximately 2.5–3 cm in diameter.
Step 5
Place 1 tablespoon of the caramel mixture into each mold.
Step 6
Optionally, wrap in decorative cellophane.
