Pumpkin Rice Pudding
Ingredients
- Boiled White Round Rice 1 cup
- Water 2 cups
- Milk 15 fl oz
- Sugar ¾ cup
- Applesauce 1 teaspoon
- Ground clove ¼ teaspoon
- Nutmeg ¼ teaspoon
- Grated Ginger Root ¼ teaspoon
- Ground Cinnamon ¼ teaspoon
- Chestnut puree 5 oz
Step-by-Step Guide
Step 1
Rinse the rice and cook for 20 minutes (2 cups of water for 1 cup of rice).
Step 2
Drain the water from the pot, then add the milk and applesauce to the cooked rice and mix thoroughly.
Step 3
Cook the mixture over low heat until it thickens.
Step 4
Add the pumpkin puree, sugar, and spices, and mix well.
Step 5
Cook the mixture over low heat until it reaches a jelly-like consistency.
Step 6
Transfer the finished mixture to a bowl or round container and refrigerate for 2-3 hours.
Step 7
Before serving, garnish the pudding with cinnamon sticks and fresh mint leaves.
