Ingredients
- Garlic 1 clove
- Pumpkin 15 oz
- Thyme 0 oz
- Parsley 0 oz
- Onion 0 oz
- Butter 0 oz
- Chicken Broth 5 fl oz
- Bay leaf 1 piece
- Lemongrass 0 oz
Step-by-Step Guide
Step 1
Cut the pumpkin into small cubes and the onion into thin strips.
Step 2
For the soup with lemongrass, finely chop the lemongrass.
Step 3
Sauté the onion in a saucepan with butter over medium heat for 1–2 minutes, add thyme, bay leaf, whole clove of garlic, and lemongrass (or curry).
Step 4
Add the pumpkin and sauté until it softens, about 10 minutes.
Step 5
Add the chicken broth and cook over medium heat for 15 minutes.
Step 6
Remove the thyme sprig and bay leaf, and blend the pumpkin into a purée.
Step 7
Pour the soup into bowls, sprinkle with finely chopped parsley, and serve.
