Pumpkin Pie with Bourbon
Ingredients
- Chestnut puree 15 oz
- 33% Cream 1 cup
- Sour Cream 3 tablespoons
- Sugar ¾ cup
- Farm fresh eggs 2 pieces
- Ground Cinnamon 1 teaspoon
- Bourbon 3½ tablespoons
- Grated Ginger Root ¾ teaspoon
- Spices ¼ teaspoon
- Salt ¼ teaspoon
- Shortcrust Cake Mix 20 oz
Step-by-Step Guide
Step 1
Roll out the pastry on a floured surface and place it in a round baking dish, trimming any excess from the edges. Gently press the pastry into the dish and poke several holes with a fork. Chill for 30 minutes.
Step 2
Preheat the oven to 375°F.
Step 3
Cover the pastry with foil and fill with grains or legumes. Bake until the edges are golden brown, about 20 minutes. Carefully remove the foil and grains, and return to the oven for another 10-15 minutes. Cool.
Step 4
In a bowl, mix all the remaining ingredients and pour over the pastry.
Step 5
Bake for about 45 minutes. If the edges of the pastry start to burn, cover them with foil. Cool.
