Description
American pumpkin pie is a classic dish of the Midwest and other regions, a humorous character of American life that appears at any holiday celebration. However, if you only enjoy it on rare occasions, it will never lose its charm.
Ingredients
- Pumpkin 45 oz
- Wheat Flour 10 oz
- Butter 5 oz
- Whole egg 1 piece
- Chicken Egg 3 pieces
- Sugar 10 oz
- Corn Starch 1 tablespoon
- Salt to taste
- Ground Cinnamon 1 tablespoon
- Grated Ginger Root 1 tablespoon
- Nutmeg to taste
- Ground clove a pinch
- Ground Black Pepper a pinch
- 33% Cream 10 fl oz
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Peel the pumpkin, removing the skin and seeds, and cut it into large pieces. Place it on a baking sheet, cover with foil, and put it in an oven preheated to 375°F for about an hour.
Step 3
Sift the flour, add a pinch of salt, and mix in the chilled butter with your hands until it resembles crumbs or sand.
Step 4
Then add the egg yolk and mix it in. If the dough doesn't come together, add a little cold water. Knead to form a firm dough, wrap it in plastic wrap, and refrigerate for half an hour.
Step 5
Cool the cooked pumpkin and blend it in a blender until smooth. Transfer the pumpkin puree onto a kitchen towel or a piece of cheesecloth folded into quarters and squeeze out any excess moisture.
Step 6
Combine the pumpkin puree with the eggs, cream, sugar, cornstarch, half a teaspoon of salt, ginger, nutmeg, ground cloves, and black pepper.
Step 7
Roll out the dough and place it in a greased baking dish. Prick the dough with a fork.
Step 8
Place parchment paper on top and fill with baking beans or regular dry beans. Bake in a preheated oven at 375°F for 20 minutes.
Step 9
Transfer the filling onto the pre-baked crust and return it to the oven for another 50–60 minutes.
Step 10
Then allow the finished pie to cool completely.
