Ingredients
- Pumpkin 1½ kg
- Milk 15 fl oz
- Coarsely Ground Rye Flour 5 oz
- Semolina 5 oz
- Whole egg 2 pieces
- Sugar 1 tablespoon
Step-by-Step Guide
Step 1
Grate the pumpkin pulp (1.5 kg), pour in 480 ml of milk, and simmer.
Step 2
Cool the mixture, add 120 g of flour or a little less semolina, 2 yolks, crushed with 1 tablespoon of sugar, and a pinch of salt.
Step 3
Mix everything well and add the beaten egg whites.
Step 4
Fry the pancakes in butter or vegetable oil. Serve with sour cream.
