Step-by-Step Guide
Step 1
Grate the pumpkin using a coarse grater. Mix the flour with the baking powder. Beat the sugar with the vegetable oil, adding the eggs one at a time.
Step 2
Combine the pumpkin, flour, egg mixture, add cinnamon, raisins, and nuts.
Step 3
Pour the mixture into a greased baking pan and bake at 355°F for about 40 minutes. You can check for doneness with a wooden skewer — it should come out clean.
