Pumpkin Ginger Soup
Ingredients
- Pumpkin 20 oz
- Carrot 1 piece
- Onion 1 piece
- Water 20 fl oz
- Olive Oil 3 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Grated Ginger Root 1 piece
Step-by-Step Guide
Step 1
In a pot, sauté the finely chopped onion and carrot in olive oil until the onion is translucent.
Step 2
Cut the pumpkin into small pieces, add to the pot, pour in the water, and cook covered on low heat for 20 minutes.
Step 3
Grate the ginger on a fine grater. Add it to the pumpkin.
Step 4
Blend everything in a blender and pour it back into the pot.
Step 5
Season with salt and pepper.
Step 6
Bring to a boil and let it sit for about ten minutes.
