Ingredients
- Nutmeg Pumpkin 15 oz
- Cane Sugar ½ cup
- Cinnamon stick 1 piece
- Cloves 3 pieces
- Vanilla extract ½ teaspoon
- Water ¾ cup
- Walnuts 0 oz
- Tahini 8 teaspoons
Step-by-Step Guide
Step 1
Peel the pumpkin and remove the seeds, then cut it into large squares or rectangles. Place the pumpkin in a heavy-bottomed pot and sprinkle with sugar. Adjust the amount of sugar to your taste.
Step 2
Carefully break the cinnamon stick and distribute it along with the cloves among the pieces of pumpkin. Pour in the water, add the vanilla extract, and place the pot on low heat. It is important to use low heat so that the water steams the pumpkin without evaporating. Cover with a lid and simmer the pumpkin until tender. The pumpkin is ready when it can be easily pierced with a fork but does not fall apart. Once the pumpkin is cooked, allow it to cool.
Step 3
While the pumpkin is simmering, chop the walnuts with a rolling pin in a glass or in a blender.
Step 4
Place 3–4 pieces of pumpkin in small deep bowls. Optionally, drizzle the resulting syrup over the top. Drizzle with tahini and generously sprinkle with walnuts.
