  • Pumpkin 20 oz
  • Onion 5 oz
  • Water 25 fl oz
  • Garlic 1 clove
  • Olive Oil 2 tablespoons
  • Almond Flour 0 oz
  • Almond slices 0 oz
  • Watercress to taste
  • Dried thyme to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Peel the pumpkin and cut it into cubes.

Step 2

In a saucepan, add olive oil and lightly sauté the peeled and finely chopped onion and garlic, then add the pumpkin and sauté a bit more.

Step 3

Then pour in the water, add salt and pepper to taste, and cook over medium heat for about 20 minutes.

Step 4

After that, blend all the ingredients together with the almond flour using a blender.

Step 5

Pour the soup into a bowl, add olive oil, and garnish with almond slices and watercress.
