Puff Pastry Pockets with Powdered Sugar
Ingredients
- Wheat Flour 3.3 cups
- Baking Powder 2 teaspoons
- Salt ½ teaspoon
- Butter 5 oz
- Sugar 0.3 cups
- Sour Cream 2½ tablespoons
- Farm fresh eggs 3 pieces
- Citrus Zest Mix ½ teaspoon
- Vegetable Oil 6 cups
- Powdered Sugar 1½ cups
Step-by-Step Guide
Step 1
In a bowl, mix the flour, baking powder, and salt.
Step 2
Using a mixer, beat the butter and sugar until creamy, then add the sour cream, eggs, and zest. Reduce the mixer speed and gradually add the flour. Mix well and roll the dough into a long log.
Step 3
Take a pasta machine. Cut the dough into small pieces and dust with flour. Stack 3 pieces on top of each other and pass through the machine. Fold the resulting dough in half and pass it through again. Repeat this process at least 8 times, dusting with flour as needed.
Step 4
Roll out the dough to a very thin state using the machine.
Step 5
Cut the dough into small rectangles and join the four corners to form pockets.
Step 6
Heat the oil over high heat to 375°F and fry, turning, until golden brown for about 1 minute. Transfer to a paper towel. Turn off the heat and repeat the same with the remaining dough.
Step 7
Sprinkle the cooled pockets with powdered sugar.
