Puff Pastry Pockets with Pineapple and Cottage Cheese

Ingredients

  • Cottage cheese 5 oz
  • Puff Pastry 1 piece
  • Canned Pineapple Chunks 2 cans
  • Whole egg 1 piece
  • Vanilla salt 2 tablespoons

Step-by-Step Guide

Step 1

Cut the puff pastry into 8 squares. Slightly roll them out.

Step 2

Mix the cottage cheese with the vanilla sugar.

Step 3

Place a bit of cottage cheese on a square of pastry, then add 2 rings of pineapple (previously drained of excess juice) on top.

Step 4

Pinch the opposite corners of the pastry together, folding the pineapple openings inward. Pinch the remaining two corners of the pastry. Seal the remaining edges of the pastry to ensure there are no openings.

Step 5

Place on a greased baking sheet. Brush the top with egg yolk.

Step 6

Bake at 180–375°F for about 25 minutes until golden and cooked through.
