Ingredients
- Spanish onions 5 pieces
- Hard Cheese 5 oz
- Puff Pastry 2 pieces
- Olive Oil 2 tablespoons
- Red Wine Vinegar 3 tablespoons
- Ground Black Pepper to taste
- Ocean salt to taste
- Clove 2 pieces
- Brown Sugar 1 tablespoon
Step-by-Step Guide
Step 1
Thaw the puff pastry by removing it from the freezer about an hour before cooking, and grate the hard cheese.
Step 2
Meanwhile, prepare the caramelized onions (I like to call it onion marmalade — it sounds tastier): slice the onions into thin half-rings, sauté until golden in a pan, add a little water to let the onions simmer for 10 minutes, then add the red wine vinegar, ground black pepper, salt, cloves, sugar, and simmer for another 5 minutes, after which transfer to a jar and store in the refrigerator.
Step 3
For the filling, cool part of the marmalade to a warm state and put the rest in the refrigerator. Place the pastry on the table — I almost never roll out puff pastry, but simply stretch it by hand to keep it from being too thin. If you prefer to roll it out, sprinkle the work surface with flour and roll it out with a rolling pin, stretching from the center to the edges, but not too thinly. Pour 2 tablespoons of oil onto the thawed pastry, making edges to prevent the filling from spilling out.
Step 4
Spread the cooked onions over the pastry, sprinkle with freshly ground black pepper, and you can either sprinkle the cheese on top right away or add it about 5 minutes before the end of baking so it has time to melt.
Step 5
Place the future pie either in a baking dish or simply on a sheet of parchment paper (the second option is better — you can just throw away the used paper later). Put it in a preheated oven at 390°F and bake until golden brown, as the filling is already fully cooked.
Step 6
Cut the finished pie into portioned pieces and serve as an appetizer or pastry with tea. It is great because it tastes amazing hot, warm, and even cold! I decided to decorate the pie with basil leaves since it was summer.
