Description

250 grams of puff pastry — 1 sheet of ready-made store-bought dough. You can add nuts to taste, but pine nuts should be included regardless :) If desired, the pastries can simply be baked in the oven.

Ingredients

  • White Beans 5 oz
  • Pistachios 5 oz
  • Unleavened dough 10 oz
  • Shelled pumpkin seeds 5 oz
  • Honey 2 tablespoons
  • Salt a pinch
  • Light Raisins, Seedless 0 oz

Step-by-Step Guide

Step 1

Soak the beans in cold water for several hours.

Step 2

Add the beans to boiling water and cook over low heat until tender (about 1 hour).

Step 3

Meanwhile, chop the nuts and raisins in a blender, add honey, blend the mixture, and transfer it to a bowl.

Step 4

Cool the cooked beans, then blend them into a puree and add to the nut mixture, mixing everything together.

Step 5

Roll out the dough and cut it into squares (usually each square requires re-rolling; the thinner, the better).

Step 6

Make the pastries by adding the filling and shaping them as desired (I prefer round shapes, like khinkali).

Step 7

Quickly fry the pastries until golden brown in hot oil (about 1.5–2 minutes on each side).

Step 8

Finish cooking the pastries in the oven at 355°F for 15 minutes.
