Ingredients
- Prunes 5 oz
- Sugar 12 teaspoons
- Egg white 2 pieces
- Wheat Flour 5 teaspoons
- Butter 0 oz
- Salt a pinch
Step-by-Step Guide
Step 1
Wash the prunes, soak them in hot water for 1 hour, then boil until swollen. If necessary, remove the pit. Pass through a sieve or chop using a food processor.
Step 2
Beat the egg yolks with the sugar.
Step 3
Whisk the egg whites with a pinch of salt until stable peaks form.
Step 4
Combine the chopped prunes with the yolks and beat until a homogeneous fluffy mass is achieved. Add the flour and mix.
Step 5
Gently fold in the whipped egg whites.
Step 6
Grease a baking dish with butter. Pour in the mixture. Drizzle melted butter on top.
Step 7
Bake for 10–15 minutes at 390°F.
Step 8
Serve the soufflé hot.
