Praline candies with pecan nuts
Ingredients
- Sugar 3 cups
- Water 0 fl oz
- Butter 5 tablespoons
- Activated Baking Soda ¼ teaspoon
- Vanilla extract ½ teaspoon
- Macadamia Nuts 15 oz
- Dry martini 5 fl oz
- White Vermouth 5 fl oz
Step-by-Step Guide
Step 1
Grease a rectangular mold with butter. In a saucepan, combine 2 cups of sugar and both vermouths. Place over low heat and stir until the sugar is completely dissolved.
Step 2
In another saucepan, combine the remaining sugar and water, place over low heat and stir until the sugar dissolves. Increase the heat without letting the mixture boil, and cook for another 8 minutes until the caramel is ready.
Step 3
Quickly pour the caramel into the vermouth mixture and place over low heat until the caramel is completely dissolved. Increase the heat and cook until the mixture reaches 245°F, about 12 minutes. Remove from heat and immediately add the baking soda. Then add the diced butter and mix well.
Step 4
Let it sit for 20 minutes until the mixture cools to 160°F. Add vanilla. Stir with a wooden spoon for 4–5 minutes until the mixture thickens. Fold in the lightly crushed nuts. By this time, the mixture should be very thick and not elastic. Transfer the mixture to the prepared mold and flatten and press it down slightly with wet hands. Cool and cut into square candies.
