Ingredients
- Salad Potatoes 5 pieces
- Courgette 1 piece
- Avocado 1 piece
- Meyer Lemon Juice 1 tablespoon
- Butter 5 oz
- Salt to taste
- Croutons 10 pieces
- 10% cream 10 fl oz
Step-by-Step Guide
Step 1
Melt the butter in a saucepan.
Step 2
Peel the potatoes and zucchini, cut them into cubes, and add them to the saucepan, seasoning with salt.
Step 3
Sauté over medium heat. Add the cream and cook, stirring, until ready. Then blend into a puree with an immersion blender.
Step 4
Peel the avocado, mash it with a fork, season lightly with salt, and mix with lemon juice. Place it in a soup bowl.
Step 5
Pour the hot puree soup over the avocado. Garnish with croutons.
