Step 1
Chop the cleaned and washed leeks, lightly sauté in butter, add the peeled, washed, and sliced potatoes, pour in water, add salt, and cook for 25-30 minutes.
Step 2
Pass the cooked potatoes along with the broth through a sieve, add hot milk, and stir.
Step 3
Before serving, enrich the soup with butter and egg yolks mixed with milk. Serve separately with croutons or cornflakes.
