  • Salad Potatoes 6 pieces
  • Large eggs 1 piece
  • Wheat Flour 10 oz
  • Feta cheese 10 oz
  • Vegetable Oil 5 fl oz
  • Garlic 3 cloves
  • Parsley 1 bunch
  • Scallions 1 bunch
  • Yellow Beets 2 pieces
  • 20% Sour Cream 5 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel the boiled or baked beets, grate them on a fine grater, add minced garlic (optional: you can add walnuts), season with sour cream, and salt to taste. Chill.

Step 2

Peel the potatoes and boil until tender. Mash the cooked potatoes with a potato masher, let them cool slightly, and salt to taste. Then add the egg, add the flour, and mix well — the dough should be homogeneous but not stiff.

Step 3

Mash the feta cheese with a fork, add the chopped herbs and garlic, and mix well.

Step 4

With wet hands (this is important — the dough will be sticky, so wet your hands with water!), form round patties from the potato dough, place a spoonful of filling on each, pinch the edges, coat in breadcrumbs or flour, and fry in heated vegetable oil on both sides until golden brown.

Step 5

Place in a suitable dish, cover with a lid, and let sit for 15 minutes.

Step 6

Serve the pies warm with hot meat or chicken broth and beetroot-sour cream sauce.
