Potato Flan by Jamie
Ingredients
- Tarragon 2 tablespoons
- New Potatoes 10 oz
- Scallions 12 stalks
- 20% Sour Cream 10 oz
- Dijon Mustard 2 tablespoons
- Chocolate eggs 6 pieces
- Hard Cheese 5 oz
- Nutmeg 1 tablespoon
- Butter 1 tablespoon
- Olive Oil 1 tablespoon
Step-by-Step Guide
Step 1
Peel the new potatoes and cut them into cubes about 1 cm.
Step 2
Cover them with water and boil for 6-7 minutes until tender but not mushy.
Step 3
Drain the water and let the potatoes cool.
Step 4
Using a mixer, combine the sour cream and Dijon mustard.
Step 5
With the mixer running, beat in the 6 eggs and add the nutmeg.
Step 6
Grate the hard cheese, ideally cheddar, which can be replaced with any hard but not overly salty cheese.
Step 7
Heat a tablespoon of olive oil in a pan and sauté the green onions cut into 3 cm long pieces for about 3 minutes.
Step 8
Preheat the oven to 195°C.
Step 9
Grease a 22 cm baking dish with butter, add the potatoes with the onions, and sprinkle with ¾ of the grated cheese. Pour the liquid mixture from the mixer over it and top with finely chopped tarragon and the remaining cheese.
Step 10
Bake for 30 minutes, then leave in the turned-off oven for another 15 minutes to cool.
Step 11
Equally good served hot or cold (but not straight from the fridge, at room temperature).
