Description

The simplest soup, very popular among our readers. Probably because it takes only 30 minutes to prepare — the vegetables and roots are sautéed in a pan and then boiled in broth. This is also a vegetarian version (replace the butter with vegetable oil for a vegan option).

Ingredients

  • Potato 2 pieces
  • Carrot 1 piece
  • Parsley 1 piece
  • Celery salt 1 piece
  • Onion 1 head
  • Sweet Corn Sticks 0 oz
  • Butter 1 teaspoon
  • Herbs to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Wash, peel, and chop the vegetables: slice the potato, julienne the carrot. Finely chop the onion, parsley root, and celery root.

Step 2

Boil the corn kernels until tender. Sauté the onion and roots.

Step 3

Bring water to a boil (you can use meat broth if desired), add the potato and carrot in sequence, and 15 minutes before the soup is ready, add the sautéed roots and corn kernels. Serve the soup garnished with herbs.
